Cheesy Spinach & Artichoke Potato Bake is a heartwarming dish that combines the creamy richness of cheese with the earthy goodness of roasted potatoes, fresh spinach, and artichokes.   • 4 medium Russet potatoes (about 1.5 lbs), thinly sliced
  • 2 cups fresh spinach, packed
  • 1 (14 oz) can marinated artichoke hearts, drained and chopped
  • 8 oz cream cheese, softened
  • 2 cups shredded cheese blend (mozzarella and cheddar)
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, drizzle olive oil and add spinach. Sauté until wilted, then stir in artichokes until heated through.
  3. In a bowl, combine softened cream cheese with garlic powder, salt, and pepper until smooth. Fold in sautéed spinach and artichokes, followed by half of the shredded cheese.
  4. In a greased baking dish, layer half of the sliced potatoes at the bottom, spread half of the cheesy mixture over them, then repeat with another layer of potatoes and more cheesy mixture on top.
  5. Top with remaining shredded cheese and drizzle lightly with olive oil.
  6. Bake for about 30-40 minutes until bubbly and golden brown.
