  • 2 lbs Russet potatoes, peeled and thinly sliced
  • 2 cups heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • 3 cloves garlic, minced
  • 1 medium sweet onion, diced
  • 3 tbsp unsalted butter (for greasing)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a casserole dish with butter.
  2. Thinly slice the potatoes to about 1/8 inch thick using a mandoline or sharp knife.
  3. In a skillet over medium heat, sauté diced onions in butter until translucent. Add minced garlic and cook until fragrant.
  4. In a bowl, whisk together heavy cream, salt, pepper, and half the shredded cheese.
  5. Layer half the potato slices in the casserole dish. Top with half the onion-garlic mixture and half the cream mixture. Repeat layers, finishing with remaining cheese on top.
  6. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
