  • 4 large sweet potatoes
  • 1 cup sharp cheddar cheese, shredded
  • 6 slices thick-cut bacon, diced
  • 1/2 cup full-fat sour cream

  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Scrub sweet potatoes clean and poke holes with a fork.
  2. Bake sweet potatoes for 45-60 minutes until tender. Let cool slightly.
  3. Cook diced bacon in a skillet over medium heat until crispy; drain on paper towels.
  4. Halve the baked sweet potatoes and scoop out the insides into a bowl. Mix with butter, sour cream, cheddar cheese, bacon, salt, and pepper until creamy.
