  • 1 lb boneless, skinless chicken breasts (about 34 pieces)
  • 1 cup roasted, salted cashews
  • 2 cups fresh bell peppers (mixed colors), sliced
  • 4 cloves fresh garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp cornstarch
  • 2 tbsp brown sugar
  • 2 tbsp rice vinegar
  • 2 tbsp vegetable oil

Instructions

  1. Prepare your ingredients by cutting the chicken into bite-sized pieces and slicing the bell peppers.
  2. Marinate the chicken in a bowl with soy sauce and cornstarch for about 15 minutes.
  3. In a skillet over medium-high heat, add vegetable oil. Cook the marinated chicken in batches until golden brown.
  4. Add the bell peppers and minced garlic to the skillet and stir-fry for another 3 minutes until tender-crisp.
  5. In a small bowl, whisk together brown sugar, rice vinegar, and additional soy sauce. Pour this sauce over the chicken and vegetables.
  6. Stir to coat and let simmer for 1-2 minutes until slightly thickened. Toss in the cashews right before serving.
