- 1 ¼ cups water
- 3 tbsp rice vinegar
- 2 tbsp sugar
- ½ tsp salt
- 4 oz imitation crab meat, shredded
- ½ English cucumber, sliced
- 1 ripe avocado, diced
- 2 tbsp low-sodium soy sauce
- 1 tbsp toasted sesame seeds
Instructions
- Rinse sushi rice under cold water until clear. Combine with water in a saucepan; bring to a boil then reduce heat to low. Cover and simmer for about 18 minutes until water is absorbed. Let sit covered for an additional 10 minutes.
- In a small bowl, dissolve sugar and salt in rice vinegar. Gently fold this mixture into the cooled rice.
- While the rice cools, slice cucumber and dice avocado.
- Spoon seasoned rice into bowls, then layer with shredded crab, cucumber slices, and avocado. Sprinkle sesame seeds on top.
- Drizzle with soy sauce before serving.
