Ingredients

  • 1 cup sushi rice
  • 1 ¼ cups water
  • 3 tbsp rice vinegar
  • 2 tbsp sugar
  • ½ tsp salt
  • 4 oz imitation crab meat, shredded
  • ½ English cucumber, sliced
  • 1 ripe avocado, diced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp toasted sesame seeds

Instructions

  1. Rinse sushi rice under cold water until clear. Combine with water in a saucepan; bring to a boil then reduce heat to low. Cover and simmer for about 18 minutes until water is absorbed. Let sit covered for an additional 10 minutes.
  2. In a small bowl, dissolve sugar and salt in rice vinegar. Gently fold this mixture into the cooled rice.
  3. While the rice cools, slice cucumber and dice avocado.
  4. Spoon seasoned rice into bowls, then layer with shredded crab, cucumber slices, and avocado. Sprinkle sesame seeds on top.
  5. Drizzle with soy sauce before serving.
