  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves garlic, minced
  • 6 cups romaine lettuce, chopped
  • 1 cup Caesar dressing (homemade or store-bought)
  • 1 cup freshly grated Parmesan cheese
  • 1 cup croutons
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts on both sides with salt and pepper.
  3. In a skillet over medium-high heat, add olive oil. Sear the chicken for about 5 minutes on each side until golden brown.
  4. Transfer the seared chicken to the baking dish and bake for 20-25 minutes until cooked through (internal temperature should reach 165°F/75°C).
  5. While the chicken bakes, toss chopped romaine lettuce with Caesar dressing in a large bowl.
  6. After baking, let the chicken rest for five minutes before slicing it into strips. Serve on top of the dressed romaine and finish with Parmesan cheese and croutons.
