- 2 lbs bone-in chicken pieces (thighs and drumsticks)
- 4 cloves fresh garlic, minced
- 1-inch piece fresh ginger, grated
- 1 cup bell peppers, chopped (mixed colors)
- 1 large onion, chopped
- 2 medium carrots, sliced
- 2 medium tomatoes, diced
- ¼ cup low-sodium soy sauce
- 2 tsp fresh thyme leaves
- 2 bay leaves
- 1 Scotch bonnet pepper (optional)
- 2 tbsp vegetable oil
- Salt to taste
Instructions
- In a bowl, mix garlic, ginger, soy sauce, thyme, and salt. Coat chicken pieces thoroughly and let marinate for at least 30 minutes.
- Heat oil in a large pot over medium heat. Add onions and sauté until translucent (about 5 minutes).
- Add bell peppers and carrots; sauté for another 3–4 minutes until slightly softened.
- Push veggies aside and add marinated chicken skin-side down. Brown on both sides to enhance flavor.
- Stir in diced tomatoes and remaining marinade. Add bay leaves and thyme sprigs. Reduce heat to low, cover, and simmer for about 45 minutes until the chicken is tender.
- Serve warm with rice or bread to soak up the sauce.
