  • 2 lbs bone-in chicken pieces (thighs and drumsticks)
  • 4 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 large onion, chopped
  • 2 medium carrots, sliced
  • 2 medium tomatoes, diced
  • ¼ cup low-sodium soy sauce
  • 2 tsp fresh thyme leaves
  • 2 bay leaves
  • 1 Scotch bonnet pepper (optional)
  • 2 tbsp vegetable oil
  • Salt to taste

Instructions

  1. In a bowl, mix garlic, ginger, soy sauce, thyme, and salt. Coat chicken pieces thoroughly and let marinate for at least 30 minutes.
  2. Heat oil in a large pot over medium heat. Add onions and sauté until translucent (about 5 minutes).
  3. Add bell peppers and carrots; sauté for another 3–4 minutes until slightly softened.
  4. Push veggies aside and add marinated chicken skin-side down. Brown on both sides to enhance flavor.
  5. Stir in diced tomatoes and remaining marinade. Add bay leaves and thyme sprigs. Reduce heat to low, cover, and simmer for about 45 minutes until the chicken is tender.
  6. Serve warm with rice or bread to soak up the sauce.
