  • 1 sheet pre-made puff pastry (thawed)
  • 2 cups fresh broccoli rabe (chopped)
  • 1 cup whole milk ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • Zest of 1 lemon
  • 2 garlic cloves (minced)
  • 2 large eggs
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Roll out the thawed puff pastry on a floured surface to about 1/8 inch thick.
  3. Chop the broccoli rabe, then sauté it with minced garlic in olive oil over medium heat until tender.
  4. In a bowl, mix sautéed broccoli rabe, ricotta cheese, grated Parmesan, lemon zest, eggs, salt, and pepper until creamy.
  5. Cut circles from the pastry using a round cutter and place them in greased muffin tins.
  6. Fill each pastry cup generously with the broccoli rabe filling.
  7. Bake for 20-25 minutes or until the pastry is golden brown.
