  • 3 tbsp lemon juice (freshly squeezed)
  • 3 tbsp olive oil

Instructions

  2. While the peas drain, chop cherry tomatoes, cucumber, red onion, and bell pepper into bite-sized pieces.
  3. In a large bowl, combine the drained black-eyed peas with chopped vegetables and parsley.
