  • 3 ripe bananas (mashed)
  • 4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 2 tsp ground cinnamon
  • 1 cup whole milk (lukewarm)
  • 1/2 cup unsalted butter (melted)

Instructions

  1. Preheat the oven to 350°F (175°C). Warm the milk in a small bowl and sprinkle in the yeast; let it bloom for about 5 minutes.
  2. In a large mixing bowl, combine mashed bananas, melted butter, and sugar. Add the frothy yeast mixture.
  3. In another bowl, whisk together flour and cinnamon. Gradually mix into the wet ingredients until combined; dough will be sticky.
  4. Knead on a floured surface for 5 minutes until smooth. Place dough in a greased bowl, cover with a towel, and let rise for about an hour or until doubled in size.
  5. Punch down the dough and roll it out into a rectangle about half an inch thick. Spread softened butter over it and sprinkle with cinnamon and sugar before rolling tightly.
  6. Cut into equal slices (about 2 inches thick) and place in a greased baking dish. Bake for 25-30 minutes until golden brown.
  7. Serve warm with icing made from powdered sugar mixed with milk.
