- 2 chipotle peppers in adobo sauce, finely chopped
- 1 cup shredded sharp cheddar cheese

- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss sweet potatoes with olive oil, salt, and pepper on the baking sheet. Roast for 25-30 minutes until tender and caramelized.
- In a large pot, heat olive oil over medium heat. Sauté onion until translucent (about 5 minutes), then add garlic for an additional minute.
- Add roasted sweet potatoes and chipotle peppers to the pot. Pour in vegetable broth and coconut milk; simmer gently while stirring occasionally.
- After about 10 minutes, turn off heat and stir in shredded cheddar cheese until melted. Adjust seasoning if needed.
