  • 2 cups diced russet or Yukon Gold potatoes

  • 1 cup diced bell peppers (any color)

  • ½ tsp paprika

Instructions

  4. Stir in crumbled bacon.
  5. Whisk eggs in a bowl; create small wells in the potato mixture and pour an egg into each well. Cover and cook for about five minutes until eggs are set but runny on top.
