Ideal for special occasions, this cake transforms simple ingredients into a stunning centerpiece that will delight everyone at your table.

Ingredients

Scale
  • 2 cups dried mixed fruit (raisins, currants, sultanas)
  • 1 cup unsalted butter, softened
  • 1 cup dark brown sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 cup chopped nuts (almonds or walnuts)
  • ¼ cup brandy or rum (optional)

Instructions

  1. Preheat your oven to 300°F (150°C). Grease and line a round cake tin with parchment paper.
  2. Soak the dried mixed fruits in brandy or rum for at least one hour.
  3. In a bowl, cream together the softened butter and brown sugar until light and fluffy (about 3–4 minutes).
  4. Add eggs one at a time, mixing well after each addition to create a smooth batter.
  5. Sift together flour, baking powder, cinnamon, and nutmeg in another bowl; fold gently into the wet mixture.
  6. Incorporate the soaked fruits and chopped nuts until evenly distributed throughout the batter.
  7. Spoon the batter into the prepared tin and smooth the top. Bake for about 1 hour and 30 minutes or until a skewer inserted comes out clean. Allow cooling before removing from the tin.
  8. For enhanced flavor, wrap cooled cake tightly in plastic wrap or foil; let it rest for at least one week before serving.
