  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1/2 cup apricot preserves
  • 3 tbsp low-sodium soy sauce
  • 3 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp ground ginger
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix together apricot preserves, soy sauce, minced garlic, olive oil, lemon juice, ground ginger, salt, and pepper.
  3. Marinate chicken in half of the glaze for at least 30 minutes.

  5. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C).
