Description

Apple Enchiladas are a delightful twist on dessert, featuring tender spiced apples wrapped in soft flour tortillas and drizzled with a rich buttery cinnamon sauce.   • 4 medium Granny Smith or Honeycrisp apples, peeled and thinly sliced
  • 8 flour tortillas
  • 1/2 cup brown sugar
  • 2 tsp ground cinnamon
  • 1/2 cup unsalted butter
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a bowl, toss apple slices with brown sugar and cinnamon until thoroughly coated.
  3. Place a generous amount of apple filling in the center of each tortilla, roll them up tightly, and arrange seam-side down in the greased baking dish.
  4. In a small saucepan over medium heat, melt the butter. Stir in the remaining brown sugar and cinnamon until well combined.
  5. Pour the warm sauce over the enchiladas and bake for 25-30 minutes until bubbly and golden.
  6. Allow to cool slightly before serving warm, drizzled with extra sauce and topped with ice cream if desired.
