- 4 medium Granny Smith or Honeycrisp apples, peeled and thinly sliced
- 8 flour tortillas
- 1/2 cup brown sugar
- 2 tsp ground cinnamon
- 1/2 cup unsalted butter
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a bowl, toss apple slices with brown sugar and cinnamon until thoroughly coated.
- Place a generous amount of apple filling in the center of each tortilla, roll them up tightly, and arrange seam-side down in the greased baking dish.
- In a small saucepan over medium heat, melt the butter. Stir in the remaining brown sugar and cinnamon until well combined.
- Pour the warm sauce over the enchiladas and bake for 25-30 minutes until bubbly and golden.
- Allow to cool slightly before serving warm, drizzled with extra sauce and topped with ice cream if desired.
