- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz mascarpone cheese, softened
- 1 cup heavy whipping cream, cold
- ¾ cup powdered sugar
- ½ cup brewed espresso or strong coffee, cooled
- 2 tbsp unsweetened cocoa powder
Instructions
- Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl. Press mixture into the bottom of an 8-inch springform pan. Bake for 10 minutes until golden brown.
- In a large bowl, beat mascarpone cheese and powdered sugar until smooth. Gradually mix in cooled coffee.
- In another bowl, whip heavy cream until soft peaks form. Gently fold into the mascarpone mixture until combined.
- Spread half of the filling over the crust. Layer with another cup of brewed coffee, then add remaining filling on top.
- Cover with plastic wrap and refrigerate for at least four hours or overnight.
- Before serving, dust with cocoa powder and slice with a warm knife.
