Description

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz mascarpone cheese, softened
  • 1 cup heavy whipping cream, cold
  • ¾ cup powdered sugar
  • ½ cup brewed espresso or strong coffee, cooled
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl. Press mixture into the bottom of an 8-inch springform pan. Bake for 10 minutes until golden brown.
  2. In a large bowl, beat mascarpone cheese and powdered sugar until smooth. Gradually mix in cooled coffee.
  3. In another bowl, whip heavy cream until soft peaks form. Gently fold into the mascarpone mixture until combined.
  4. Spread half of the filling over the crust. Layer with another cup of brewed coffee, then add remaining filling on top.
  5. Cover with plastic wrap and refrigerate for at least four hours or overnight.
  6. Before serving, dust with cocoa powder and slice with a warm knife.
