  • 8 oz cream cheese, softened
  • 8 oz high-quality dark chocolate (at least 60% cocoa), chopped
  • 1 cup granulated sugar
  • 2 cups fresh raspberries, divided
  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 1 cup whipped cream (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a springform pan with butter.
  2. In a bowl, mix graham cracker crumbs and melted butter. Press tightly into the bottom of the pan to form the crust.
  3. Melt dark chocolate over simmering water or in the microwave until smooth. Allow to cool slightly.
  4. In another bowl, beat cream cheese and sugar until creamy. Gradually add melted chocolate and mix until fully combined. Gently fold in half of the raspberries.
  5. Pour the filling into the crust and bake for 45-50 minutes until set but slightly jiggly in the center. Let cool completely before refrigerating for at least four hours or overnight.
  6. Serve chilled, topped with whipped cream and remaining raspberries.
