  • 2 medium Fuji or Honeycrisp apples, chopped
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Prepare the celery root by peeling and cutting it into 1-inch cubes.
  2. Toss the celery root with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until golden brown.

  4. Add roasted celery root, chopped apples, and vegetable broth to the pot. Bring to a gentle simmer for about 10 minutes.
