  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium beef broth

  • 1 cup provolone cheese, shredded (for topping)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot over medium heat, sauté onions and green bell peppers in olive oil until softened, about 5 minutes.
  2. Increase heat; add beef chuck roast and brown on all sides for approximately 8 minutes.
