- 2 cups elbow macaroni
- 2 cups sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1/4 cup balsamic vinegar
- 2 large onions, sliced
- 1 cup mushrooms, sliced
- 3 tablespoons butter
- 1/4 cup all-purpose flour
- 2 cups whole milk
- Salt and pepper to taste
Instructions
- Cook elbow macaroni according to package directions until al dente. Drain and set aside.
- In a skillet, melt 2 tablespoons of butter over medium heat. Add sliced onions and cook for about 20 minutes until golden brown.
- Stir in sliced mushrooms and the remaining tablespoon of butter; sauté for another 5 minutes, seasoning with salt and pepper.
- In a saucepan, melt 3 tablespoons of butter over medium heat. Whisk in flour until smooth; gradually add milk while whisking continuously. Stir in cheddar and mozzarella until melted.
- Combine cooked macaroni with the cheese sauce, balsamic vinegar, onions, and mushrooms; mix well.
- For baked mac & cheese (optional), transfer to a greased baking dish, top with extra cheese or breadcrumbs, and bake at 350°F (175°C) for about 20 minutes until bubbly.
