  • 2 cups elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup balsamic vinegar
  • 2 large onions, sliced
  • 1 cup mushrooms, sliced
  • 3 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • Salt and pepper to taste

Instructions

  1. Cook elbow macaroni according to package directions until al dente. Drain and set aside.
  2. In a skillet, melt 2 tablespoons of butter over medium heat. Add sliced onions and cook for about 20 minutes until golden brown.
  3. Stir in sliced mushrooms and the remaining tablespoon of butter; sauté for another 5 minutes, seasoning with salt and pepper.
  4. In a saucepan, melt 3 tablespoons of butter over medium heat. Whisk in flour until smooth; gradually add milk while whisking continuously. Stir in cheddar and mozzarella until melted.
  5. Combine cooked macaroni with the cheese sauce, balsamic vinegar, onions, and mushrooms; mix well.
  6. For baked mac & cheese (optional), transfer to a greased baking dish, top with extra cheese or breadcrumbs, and bake at 350°F (175°C) for about 20 minutes until bubbly.
