Ingredients

  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1 cup cherry tomatoes, halved
  • 1 medium red onion, sliced
  • 2 tsp dried oregano
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. Season chicken breasts with salt and pepper.
  3. In a bowl, combine olive oil, garlic, oregano, lemon juice, salt, and pepper. Marinate chicken in this mixture for at least 30 minutes.
  4. Chop cherry tomatoes and red onion; layer around marinated chicken in the baking dish.
  5. Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (75°C). For extra crispiness, broil on high for an additional 3-5 minutes.
