  • 1 cup glutinous rice (sticky rice)
  • 1 cup full-fat coconut milk
  • ½ cup granulated sugar
  • 2 ripe mangoes, diced
  • Pinch of salt

Instructions

  1. Rinse the glutinous rice until the water runs clear. Soak in water for 4 hours or overnight.
  2. Drain and steam the soaked rice in a cheesecloth-lined steamer for about 25 minutes until tender.
  3. In a saucepan over medium heat, combine coconut milk, sugar, and salt. Stir until dissolved without boiling.
  4. Mix half of the coconut sauce with warm sticky rice until coated.
  5. In clear serving glasses, layer sticky rice and diced mangoes until filled, finishing with mango on top.
  6. Chill in the refrigerator for at least 30 minutes before serving to meld flavors.
