  • 3 ripe bananas (about 1 cup mashed)
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup unsalted butter (melted)
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the bananas until smooth.
  3. Add melted butter, sugars, eggs, and vanilla to the mashed bananas; mix well.
  4. In another bowl, combine flour, baking soda, salt, and cinnamon. Gradually add to the wet mixture until just combined.
  5. Pour half of the batter into the prepared loaf pan. Sprinkle with half of the cinnamon-sugar mixture. Add remaining batter and top with the rest of the cinnamon-sugar blend.
  6. Bake for about 60 minutes or until a toothpick comes out clean. Allow cooling before slicing.
