Ingredients
- 1 lb lean ground beef
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 bell peppers (any color), diced
- 2 (14.5 oz) cans diced tomatoes
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 2 tbsp chili powder
- 1 tsp ground cumin
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add olive oil. Sauté onions until soft (about 5 minutes), then add garlic and bell peppers; cook until tender.
- Push vegetables aside and add ground beef. Brown for about 7 minutes, breaking apart with a wooden spoon.
- Stir in chili powder, cumin, salt, and pepper; cook for another 2 minutes.
- Add diced tomatoes with juices and drained beans; stir well.
- Bring to a gentle boil, then reduce heat to low. Cover and let simmer for at least 30 minutes.
