  • 2 lbs boneless leg of lamb, cut into bite-size pieces
  • 3 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, diced
  • 2 medium sweet onions, finely chopped
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 cup pearl barley, rinsed
  • 1 tsp fresh thyme leaves
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear lamb pieces until browned on all sides.
  2. Add chopped onions and minced garlic; stir until fragrant and onions are translucent.
  3. Incorporate chopped carrots and potatoes; cook for about two minutes.
  4. Pour in beef broth, add bay leaves and thyme sprigs. Bring to a gentle boil then reduce heat to simmer.
  5. Stir in rinsed pearl barley and let simmer for 30-40 minutes until tender.
  6. Season with salt and pepper to taste. Remove bay leaves before serving.
