  • 1 lb lean ground beef
  • 1 cup breadcrumbs (plain or seasoned)
  • 1 large egg
  • ¼ cup fresh parsley (chopped)
  • 4 cloves garlic (minced)
  • 1 medium onion (finely chopped)
  • 2 medium carrots (diced)
  • 2 medium potatoes (cut into chunks)
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken or beef broth
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, parsley, garlic, salt, and pepper until just mixed.
  2. Heat olive oil in a large pot over medium heat. Brown the meatballs on all sides for about 5 minutes; set aside.
  3. In the same pot, sauté onions and carrots until translucent (about 3 minutes).
  4. Stir in diced potatoes and canned tomatoes, mixing well.
  5. Pour in the broth while scraping up any browned bits from the bottom. Add bay leaves.
  6. Return meatballs to the pot; bring to a boil then reduce heat to low. Cover and simmer for 30-40 minutes until potatoes are tender.
