- ¼ cup fresh parsley (chopped)
- 4 cloves garlic (minced)
- 1 medium onion (finely chopped)
- 2 medium carrots (diced)
- 2 medium potatoes (cut into chunks)
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken or beef broth
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large bowl, combine ground beef, breadcrumbs, egg, parsley, garlic, salt, and pepper until just mixed.

- Return meatballs to the pot; bring to a boil then reduce heat to low. Cover and simmer for 30-40 minutes until potatoes are tender.
