- 3–4 boneless skinless chicken breasts (about 1.5 lbs)
- 2 cups fresh broccoli florets
- 2 tbsp extra virgin olive oil
- 4 garlic cloves, minced
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 2 tbsp fresh lemon juice
- Salt and pepper to taste
- 1 tsp dried Italian herbs
- 1 cup low-sodium chicken broth
Instructions
- 1. Marinate the chicken in olive oil, salt, pepper, and dried herbs for at least 30 minutes.
- 2. Preheat the grill to medium-high heat. Grill each breast for 6-7 minutes per side until fully cooked.
- 3. Blanch broccoli in boiling salted water for 2-3 minutes until tender-crisp; drain and set aside.
- 4. In a saucepan, sauté minced garlic in olive oil until fragrant. Gradually whisk in heavy cream until thickened.
- 5. Stir in Parmesan cheese and lemon juice until well combined.
- 6. In bowls, layer quinoa or rice (if desired), top with sliced grilled chicken and steamed broccoli, then drizzle with creamy garlic sauce.
