Ingredients

  • 1 lb ground chicken
  • 1/2 cup plain breadcrumbs
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, finely chopped
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 2 garlic cloves, minced
  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Gather and prepare all ingredients by chopping parsley and zesting lemons.
  2. In a bowl, mix ground chicken, breadcrumbs, feta, garlic, parsley, lemon zest, salt, and pepper until just combined.
  3. Shape the mixture into 1-inch meatballs.
  4. Heat olive oil in a skillet over medium heat and sear meatballs until golden brown on all sides (approximately 5-7 minutes).
  5. In another pot, boil water and cook orzo according to package instructions. Drain and return to the pot.
  6. Stir in olive oil, lemon juice, salt, pepper, and remaining parsley into the cooked orzo.
  7. Serve meatballs over lemon orzo with extra feta and parsley as garnish.
