- 1/2 cup plain breadcrumbs
- 1/2 cup crumbled feta cheese

- Zest of 1 lemon
- 2 tbsp lemon juice

- 1 cup orzo pasta
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Gather and prepare all ingredients by chopping parsley and zesting lemons.
- In a bowl, mix ground chicken, breadcrumbs, feta, garlic, parsley, lemon zest, salt, and pepper until just combined.
- Shape the mixture into 1-inch meatballs.
- Heat olive oil in a skillet over medium heat and sear meatballs until golden brown on all sides (approximately 5-7 minutes).
- In another pot, boil water and cook orzo according to package instructions. Drain and return to the pot.
- Stir in olive oil, lemon juice, salt, pepper, and remaining parsley into the cooked orzo.
- Serve meatballs over lemon orzo with extra feta and parsley as garnish.
