  • 1 cup long-grain white rice
  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1/2 cup water (for seasoning)
  • 1 cup salsa (fresh or jarred)
  • 1 can (15 oz) black beans, rinsed
  • 1 cup shredded cheddar cheese
  • 1 ripe avocado, sliced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Rinse the rice under cold water until clear. Combine with 2 cups of water in a medium saucepan. Bring to a boil, then reduce heat to low and simmer for 18-20 minutes.
  2. In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat if needed.
  3. Stir in taco seasoning and add 1/2 cup water. Simmer for about 5 minutes until thickened.
  4. Assemble the bowls by layering cooked rice, seasoned beef, black beans, and salsa on top.
  5. Finish with shredded cheese, avocado slices, and fresh cilantro.
