  • 2 large lemons (juiced)
  • 2 tbsp fresh thyme (chopped)
  • 2 tbsp fresh rosemary (chopped)
  • 5 cloves garlic (minced)
  • 1/4 cup extra virgin olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • seasonal vegetables (like carrots and potatoes) (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Place the chicken in a roasting pan and trim excess fat.
  3. In a bowl, whisk together lemon juice, garlic, thyme, rosemary, olive oil, salt, and pepper.
  4. Pour half of the marinade over the chicken, massaging it into the skin.
  5. If using vegetables, toss them in olive oil with salt and pepper; arrange around the chicken.
  6. Roast for about 1 hour and 15 minutes until the internal temperature reaches 165°F (75°C), basting with reserved marinade occasionally.
  7. Let the chicken rest for 10 minutes before carving.
