  • 34 boneless, skinless chicken breasts
  • 2 ears fresh corn on the cob (kernels removed)
  • 1 cup long-grain white rice
  • 2 tbsp mayonnaise
  • Juice of 1 lime
  • ¼ cup fresh cilantro (chopped)
  • 1 tsp chili powder
  • Salt & pepper to taste
  • ¼ cup crumbled feta cheese (optional)

Instructions

  1. Cut chicken into bite-sized pieces.
  2. In a saucepan, combine rice with 2 cups water. Bring to a boil, then reduce heat and cover for about 18 minutes until fluffy.
  3. Heat oil in a skillet over medium-high heat. Add chicken, season with salt, pepper, and chili powder; cook until golden brown (6-8 minutes).
  4. Mix in corn, mayonnaise, and lime juice; cook until warmed through (3-5 minutes).
  5. Layer rice at the bottom of each bowl; top with chicken-corn mixture. Garnish with cilantro and feta if desired.
  6. Add extra lime wedges for garnish.
