- Juice of 2 limes

- 1 cup long-grain rice
- 2 cups chicken broth

- 1 tsp paprika
- Salt and pepper to taste
- ½ cup sour cream or Greek yogurt
- 1 green pepper (or jalapeño)
- 1 tbsp vinegar (white or apple cider)
Instructions
- Marinate the Chicken: In a bowl, combine olive oil, minced garlic, lime juice, cumin, paprika, salt, and pepper. Add chicken breasts and coat evenly. Marinate for at least 30 minutes.
