  • 1 cup fresh cilantro leaves
  • Juice of 2 limes
  • 2 tbsp olive oil
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • ½ cup sour cream or Greek yogurt
  • 1 green pepper (or jalapeño)
  • 1 tbsp vinegar (white or apple cider)

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, minced garlic, lime juice, cumin, paprika, salt, and pepper. Add chicken breasts and coat evenly. Marinate for at least 30 minutes.
  2. Prepare the Rice: Rinse long-grain rice under cold water until clear. Combine rinsed rice with chicken broth and a pinch of salt in a pot. Bring to a boil over medium heat.
  3. Cook the Chicken: Heat grill or skillet over medium-high heat. Cook marinated chicken for about 6-7 minutes on each side until golden brown and cooked through.
  4. Make the Green Sauce: Blend cilantro leaves, sour cream (or yogurt), green pepper (or jalapeño), vinegar, lime juice, salt, and pepper until smooth.
  5. Cook the Rice: Once boiling, reduce heat to low, cover pot with a lid, and cook for about 15-20 minutes until liquid is absorbed. Fluff with a fork before serving.
