- 1 cup long-grain white or brown rice
- 1 tsp garlic powder
- 2 tbsp extra virgin olive oil
- 1 cup bell peppers, diced
- 1 small onion, diced
- 2 cups low-sodium chicken broth
- Fresh parsley for garnish
Instructions
- Prepare your ingredients by chopping the bell peppers and onion.
- Cook the rice: In a pot, combine rice and chicken broth as per package instructions. Bring to a boil, then reduce heat and simmer for 15-20 minutes until fluffy.
