  • 1 lb lean ground turkey
  • 1 tbsp lemon zest (from about 1 lemon)
  • 1 tsp freshly cracked black pepper
  • 1 cup long-grain white or brown rice
  • 1 tsp garlic powder
  • 2 tbsp extra virgin olive oil
  • 1 cup bell peppers, diced
  • 1 small onion, diced
  • 2 cups low-sodium chicken broth
  • Fresh parsley for garnish

Instructions

  1. Prepare your ingredients by chopping the bell peppers and onion.
  2. Cook the rice: In a pot, combine rice and chicken broth as per package instructions. Bring to a boil, then reduce heat and simmer for 15-20 minutes until fluffy.
  3. Sauté vegetables: Heat olive oil in a skillet over medium heat. Add bell peppers and onion; cook for about 5 minutes until softened.
  4. Cook turkey: Add ground turkey, garlic powder, lemon zest, black pepper, and salt to the skillet. Cook until the turkey is browned (7-10 minutes).
  5. Combine: Fold cooked rice into the skillet with turkey and veggies; stir well over low heat for a couple of minutes.
  6. Garnish & serve: Spoon into bowls and top with fresh parsley before serving.
