  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cups broccoli florets
  • 2 medium carrots, thinly sliced
  • 1 inch fresh ginger, minced
  • 3 garlic cloves, minced
  • ¼ cup low-sodium soy sauce
  • 1 tbsp sesame oil (plus extra for cooking)
  • 1 tsp cornstarch
  • 2 green onions, chopped

Instructions

  1. Chop all vegetables and slice chicken into strips.
  2. Heat a large skillet or wok over medium-high heat. Add sesame oil.
  3. Cook chicken strips seasoned with salt and pepper until golden brown (5–7 minutes).
  4. Add minced garlic and ginger; cook for 30 seconds until fragrant.
  5. Stir in chopped vegetables and cook for another 4–5 minutes until crisp and vibrant.
  6. In a small bowl, whisk soy sauce with cornstarch until smooth. Pour over stir-fry and toss for another minute until thickened.
