  • 4 large eggs
  • 4 corn or flour tortillas
  • ½ cup crumbled queso fresco or shredded cheddar
  • ¼ cup sour cream
  • ¼ cup fresh cilantro, chopped
  • 2 lime wedges

Instructions

  1. In a medium skillet over medium heat, cook crumbled chorizo until browned and crispy (5–7 minutes).
  2. Reduce heat to low and add whisked eggs to the skillet with chorizo. Stir gently until creamy and just set (3–4 minutes).
  3. Warm tortillas in another skillet for about 15 seconds on each side.
