Ingredients

Scale
  • 1 lb medium shrimp, peeled and deveined
  • 8 oz egg noodles
  • 1/4 cup Szechuan sauce (store-bought or homemade)
  • 4 cloves garlic, minced
  • 2 green onions, sliced (for garnish)
  • 2 tbsp vegetable oil
  • 1 bell pepper, chopped (any color)
  • 1 tbsp toasted sesame seeds (for garnish)
  • 3 tbsp low-sodium soy sauce
  • 2 tsp chili paste (adjust to taste)
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar

Instructions

  1. Gather all ingredients. Rinse shrimp under cold water and pat dry. Chop bell pepper into bite-sized pieces.
  2. Bring a large pot of salted water to boil. Cook egg noodles according to package instructions until al dente. Drain and set aside.
  3. In a large skillet over medium heat, heat vegetable oil. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Toss in shrimp and chopped bell pepper. Cook until shrimp are pink and opaque (about 3-5 minutes), stirring occasionally.
  5. In a small bowl, whisk together soy sauce, chili paste, rice vinegar, and brown sugar. Pour over shrimp and peppers in the skillet.
  6. Add cooked noodles to the skillet and gently toss until coated in sauce—about 2 minutes.
  7. Serve hot, garnished with sliced green onions and toasted sesame seeds.
