Ingredients

  • 1 cup sushi rice
  • 1.5 cups water
  • 3 tbsp rice vinegar
  • 1 lb shrimp (peeled and deveined)
  • 2 tbsp olive oil
  • 0.5 cucumber (thinly sliced)
  • 1 ripe avocado (sliced)
  • 0.25 cup mayonnaise
  • 2 tbsp Sriracha
  • 2 tbsp sesame seeds (for garnish)

Instructions

  1. Rinse sushi rice under cold water until clear, then cook with water according to package instructions. Once cooked, mix in rice vinegar and let cool.
  2. Heat olive oil in a skillet over medium heat, season shrimp with salt and pepper, and cook for about 3 minutes on each side until pink.
  3. While shrimp cooks, slice cucumber and avocado.
  4. Using a mold or your hands, layer sushi rice, shrimp, cucumber slices, avocado, and drizzle with spicy mayo.
  5. Top with additional spicy mayo and sprinkle sesame seeds before serving.
