- 1.5 cups water
- 3 tbsp rice vinegar
- 1 lb shrimp (peeled and deveined)
- 2 tbsp olive oil
- 0.5 cucumber (thinly sliced)
- 1 ripe avocado (sliced)
- 0.25 cup mayonnaise
- 2 tbsp Sriracha
- 2 tbsp sesame seeds (for garnish)
Instructions
- Rinse sushi rice under cold water until clear, then cook with water according to package instructions. Once cooked, mix in rice vinegar and let cool.
- Heat olive oil in a skillet over medium heat, season shrimp with salt and pepper, and cook for about 3 minutes on each side until pink.
- While shrimp cooks, slice cucumber and avocado.
- Using a mold or your hands, layer sushi rice, shrimp, cucumber slices, avocado, and drizzle with spicy mayo.
- Top with additional spicy mayo and sprinkle sesame seeds before serving.
