- 2 cups roasted butternut squash (cubed)
- 1/2 cup crumbled goat cheese
- 1/2 cup toasted pecans
- 1/3 cup dried cranberries

- 2 tbsp extra virgin olive oil
- 1 tsp Dijon mustard
- Salt & pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Toss cubed butternut squash in olive oil, salt, and pepper, then spread evenly on a baking sheet.
- Roast for 25-30 minutes until golden brown and tender.
- Rinse mixed greens under cold water and place in a large bowl.
- In a small bowl, whisk together maple syrup, olive oil, Dijon mustard, salt, and pepper to make the dressing.
- Once the squash has cooled slightly, add it to the greens along with goat cheese, pecans, and cranberries.
- Drizzle dressing over the salad just before serving and gently toss to combine.
