  • 2 medium Fresh Artichokes
  • 2 ripe Tomatoes (chopped)
  • 1 small Red Onion (thinly sliced)
  • 4 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice (freshly squeezed)
  • ¼ cup Fresh Basil (torn)
  • Salt & Pepper (to taste)

Instructions

  1. Prepare the artichokes by washing them and removing tough outer leaves until tender ones are exposed. Cut off the top inch and slice in half lengthwise.
  2. Boil salted water in a pot and cook the artichoke halves for 10-15 minutes until tender; they should pierce easily with a fork.
  3. While the artichokes cook, chop the tomatoes and slice the red onion thinly.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to create your dressing.
  5. In a large bowl, combine cooked artichokes, chopped tomatoes, red onion slices, and torn basil leaves. Drizzle with dressing and toss gently to coat.
