  • 4 large eggs
  • 1/2 cup heavy cream
  • 1 cup fresh spinach (chopped)
  • 1/2 cup feta cheese (crumbled) or cheddar cheese (shredded)
  • 1 cup cherry tomatoes (halved)
  • 2 tbsp fresh thyme or basil (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on the prepared sheet, pressing down gently to eliminate air pockets.
  3. In a mixing bowl, whisk together eggs, heavy cream, salt, and pepper until frothy.
  4. Fold in chopped spinach and cheese of choice. Pour this mixture into the center of the pastry, leaving about an inch border.
  5. Scatter halved cherry tomatoes and fresh herbs over the top.
  6. Bake for 25-30 minutes until golden brown and puffed up. Let cool slightly before slicing and serving warm.
