- 1 cup quinoa
- 2 tbsp olive oil
- 3 tbsp freshly squeezed lemon juice
- 2 tbsp fresh dill, chopped
- Salt and pepper to taste
- 1 ripe avocado, sliced
- 2 tbsp pine nuts (optional)
Instructions
- Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups water or broth. Bring to boil, then cover and simmer on low for about 15 minutes until fluffy.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Place salmon fillets skin-side down, drizzle with olive oil, and season with salt, pepper, and half the lemon juice.
- Bake salmon for 12-15 minutes until flaky. Meanwhile, toast pine nuts in a dry skillet over medium heat until golden brown.
- Assemble bowls by layering quinoa, salmon, avocado slices, toasted pine nuts (if using), and dollops of dill sauce made from remaining lemon juice mixed with chopped dill stirred into Greek yogurt or sour cream.
