  • 4 medium sweet potatoes
  • 1 lb lean ground beef or turkey
  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup shredded cheese (cheddar and Monterey Jack blend)

Instructions

  1. 1. Preheat the oven to 400°F (200°C). Scrub sweet potatoes clean and place them on a baking sheet lined with parchment paper.
  2. 2. Bake sweet potatoes for about 45 minutes or until tender.
  3. 3. While they bake, heat a skillet over medium heat. Brown the ground meat for 7–10 minutes until fully cooked.
  4. 4. Add taco seasoning to the meat, stir in black beans, and simmer for an additional 5 minutes.
  5. 5. Once sweet potatoes are done, slice them open lengthwise and fluff the insides with a fork. Fill each potato with the taco mixture, then top with shredded cheese.
  6. 6. Return stuffed potatoes to the oven for another 5–10 minutes until cheese is melted.
