  • 2 cups large curd cottage cheese
  • 2 cups fresh apples (about 2 medium-sized, thinly sliced)
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon (divided)
  • 1 tsp vanilla extract
  • 3 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a bowl, mix the cottage cheese, brown sugar, eggs, vanilla extract, and half of the cinnamon until well combined.
  3. Layer half of the apple slices in the baking dish, followed by half of the cottage cheese mixture. Repeat with the remaining apples and cottage cheese.
  4. Sprinkle the top with the remaining cinnamon and an optional extra sprinkle of brown sugar.
  5. Bake for 40-45 minutes or until golden brown and set in the middle. Allow to cool slightly before serving.
