  • 2 medium zucchinis (spiralized into noodles)
  • 1 cup shredded carrots (freshly shredded)
  • 1 cup bell peppers (sliced, any color)
  • ¼ cup fresh cilantro (finely chopped)
  • ¼ cup roasted unsalted peanuts (crushed)
  • 3 tbsp fish sauce
  • 2 tbsp tamarind paste
  • 1 tbsp brown sugar
  • 2 tbsp fresh lime juice
  • 1 tsp Sriracha sauce

Instructions

  1. Spiralize the zucchinis into noodle-like strands.
  2. In a large skillet over medium-high heat, add oil and sauté shredded carrots and bell peppers until softened.
  3. In a bowl, whisk together fish sauce, tamarind paste, brown sugar, lime juice, and Sriracha until well blended.
  4. Toss zucchini noodles into the skillet with the sautéed veggies. Stir gently until warmed through but still al dente.
  5. Pour the sauce over the zoodles and toss to coat evenly. Cook briefly to combine flavors.
  6. Garnish with fresh cilantro and crushed peanuts before serving warm.
