  • 14 oz firm or extra-firm tofu
  • 8 oz fresh lo mein noodles (or spaghetti)
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup carrots, julienned
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 2 tsp toasted sesame oil
  • 4 green onions, chopped

Instructions

  1. Press the tofu for 15 minutes to remove excess moisture. Cut into cubes.
  2. Heat oil in a non-stick skillet over medium heat; sauté the tofu until golden brown on all sides.
  3. Add garlic; sauté until fragrant. Then toss in bell peppers, broccoli, and carrots. Cook for 3-4 minutes until veggies are tender-crisp.
  4. Stir in cooked lo mein noodles along with soy sauce and sesame oil. Mix well over low heat.
  5. Garnish with green onions before serving hot.
