Ingredients

  • 34 boneless, skinless chicken breasts
  • Fresh cilantro
  • 1 cucumber
  • 1 red bell pepper
  • 2 carrots
  • Juice of 1 lime
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon fish sauce
  • 3 tablespoons peanut butter
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • Sriracha (optional, to taste)

Instructions

  1. Cook chicken breasts over medium heat for 6-8 minutes per side until golden brown and fully cooked. Let rest for 5 minutes before slicing.
  2. Chop the cucumber, bell pepper, carrots, and cilantro.
  3. In a bowl, whisk together lime juice, soy sauce, fish sauce, peanut butter, honey, sesame oil, and Sriracha (if using).
  4. In a large bowl, combine sliced chicken and chopped veggies. Pour the dressing over and toss to coat evenly.
  5. Garnish with extra cilantro or crushed peanuts before serving.
