  • 2 medium sweet potatoes, peeled and cubed (about 4 cups)
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 3 tbsp tahini
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • ½ tsp salt (to taste)
  • ¼ tsp freshly cracked pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the cubed sweet potatoes with olive oil, salt, pepper, and garlic powder until well coated. Spread evenly on the prepared baking sheet.
  3. Roast sweet potatoes for 25-30 minutes or until tender and caramelized, flipping halfway through.
  4. While roasting, mix tahini, olive oil, salt, pepper, and a splash of water in a bowl until smooth. Stir in chickpeas until fully coated.
  5. Combine roasted sweet potatoes with tahini butter chickpeas on the baking sheet.
