  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 4 large flour tortillas
  • 4 large eggs
  • 2 tsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté the chopped onion until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  2. Stir in fresh spinach and cook until wilted. Whisk eggs with salt and pepper in a bowl, then pour into the skillet. Scramble until fully cooked but creamy.
  3. Reduce heat, add crumbled feta cheese, and stir gently until slightly melted.
  4. In another skillet over medium heat, lay one tortilla flat. Spoon half the filling onto one side of the tortilla and fold it over to create a taco shape. Press gently to seal.
  5. Cook each quesadilla for 3-4 minutes on each side until golden brown and crispy. Add more olive oil for extra crunch if desired.
  6. Remove from heat, slice into wedges, and serve hot with salsa or sour cream.
