  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup mandarin oranges (fresh or canned)
  • 4 cups mixed greens (arugula, spinach, romaine)
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, thinly sliced
  • 2 tbsp sesame oil
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey

Instructions

  1. Preheat grill or skillet over medium-high heat. Season chicken with salt and pepper; cook for 6-7 minutes per side until fully cooked. Let rest before slicing.
  2. In a small bowl, whisk together sesame oil, soy sauce, honey, and rice vinegar until combined.
  3. Chop mixed greens, red bell pepper, and cucumber into bite-sized pieces.
  4. Slice the rested chicken into strips and place on top of the greens.
  5. Add mandarin oranges on top and drizzle with dressing just before serving. Toss gently to combine.
