  • 3 tbsp low-sodium soy sauce

Instructions

  1. Cook soba noodles in boiling water according to package instructions until al dente. Drain and rinse under cold water.
  2. While noodles cool, prepare vegetables by slicing cucumber, carrots, bell peppers, and green onions; chop cilantro or mint.
  3. In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey (or maple syrup), minced garlic, and sesame oil until smooth.
